Making Sourdough Coffee Cake
This Coffee Cake can be made from the left over batter when you make Sourdough Waffles
Or alternatively you can
Make a sponge in the same way that you make a sponge for sourdough waffles

Add flour to the sponge until it reaches a bread dough like consistency
Roll out the dough into a rectangular sheet (about 1/4 inche thick)
Brush the top of the sheet with melted butter
In a bowl mix the following in amounts to meet your taste
a) brown sugar
b) cinnamon
c) nutmeg
d) chopped nuts
e) raisins or other small dried fruit
Spread the above mixture on the buttered sheet
Roll the sheet into a jelly roll like loaf - seal all the ends to prevent leakage
Bake in a 350 degree oven for 20-25 minutes
