Dutch Babies (Original Recipe)
Plus A modified Recipe by Dwight from 1998
The following is the Original Recipe
Ingredients
- 3 eggs
- 1/2 cup flour (sifted)
- 1/2 tsp salt
- 3 tablespoons butter
- 1/2 cup milk
- a pinch of nutmeg
- Note comment below re use of 1/8 tsp of Baking Powder
- Mix the eggs in a bowl
- Gradually add flour and salt while mixing at low speed (see below about also adding Baking Powder)
- Add the milk
- Grate in some nutmeg
- Melt the butter in a heavy frying pan (remember to brush butter on the sides of the frying pan)
- cook at 450 degrees for about 12 minutes
- Serve while still warm

First lets look at the results from the modified recipe
Below is a copy of the fax from 1998 that has a copy of the original recipe card
(note the word egg in the fax and in the card).
This fax has a modification of the recipe by Dwight calling for 1/8 tsp of Baking Powder
Dwight's recipe also has another important modification.
It prohibits any peeking in the oven before removing the finished Dutch Baby.
Here is Dwight's modified Dutch Baby recipe
Ingredients

- 1/8 tsp of Baking Powder

- cook at 450 degrees for about 12 minutes
Peeking prior to the end will ruin the Dutch Baby
- Serve while still warm
