Potato Leek Soup

1) Prepare the leeks:
       Dice three or four leeks
       Sauté the leeks in Butter
2) Prepare the potatoes:
       Peel and dice three or four medium size white potatoes
3) Prepare chicken broth -- preferably home made broth -- see separate recipe

4) Add enough chicken broth to the leeks and the potatoes to cover the leeks and potatoes
5) Heat the above to a boil and cook until potatoes are soft and then cool
6) Run the cooled broth, leeks and potatoes through a blender

When ready to serve:
7) Reheat and add some cheddar or Swiss cheese
8) Enjoy
