Italian Ravioli

--- with Spinach and meat ---

1) First make the pasta for the ravioli covers as follows


1 and 1/2 cups of unbleached white flour
1 cup of semolina flour
1/2 teasspon of salt
3 eggs

Put the above in a food processor and
then add the following as it is mixing

1 tablespoon of olive oil
1 tablespoon of water

Roll out the dough (after you make the filling a explained below)

The above make pasta for about 60 ravioili

2) Second make the filling as follows:

First, Cook one to one and a half pounds of
lean ground beef in a frying pan
Then add

2 packages of frozen spinach
that has been thawed, drained and chopped
4 eggs
a handful of chopped parsley
1 cup of grated parmesan cheese

Mix the above until well blended

3) Finally, use a ravioli form and put filling between two sheets of pasta
Press the edges of the ravioli and cut the pasta to form ravioli

Cook in boiling water and eat
