Date Bars

Recipe provided to Joan by Ann Magliscau


Introductory Notes:

1) Use dried Medjool Dates
2) 2 cups of dates equal one pound (see Tamara's note below about this )
3) Joan used unsalted butter


First:

Chop the dates
Then take one stick (or 1/2 cup) of butter and
one cup of chopped dates
Melt in a sause pan and remove from fire

Second

Add the following to the above
and mix to dissolve
1/2 tsp salt
1 tsp vanilla
1 cup of sugar

Third

Add the following to the above and mix in
2 eggs
1 cup flour
1/2 tsp Baking Powder
1/2 cup chopped nuts (can use Walnuts or Almonds)

Forth

Grease an 8 or 9 inch pan
Pour the above mixture into the greased pan
Bake at 350 degrees for 20 to 30 minutes
check with a tooth pick at 20 minutes to see if it is done

Fifth (optional

Finish by sprinkling with powdered sugar


Note: You can double the receipe and bake in a jelly roll pan

Notes suggested by Tamara:
One pound of dates actually measured as 4 cups after pitting.
Use 2 cups pitted dates per recipe
so -- if doubling the recipe use all 4 cups(1 pound)
