Phil Pirrotta's Grandpa's
Summer Tomato Salad 9/6/2023

1) Cup up two tomatoes into bits sized Triangles -- capturing the juice

2) Shake salt onto the pieces so that every piece is lightly salted.
This will draw out the liquid -- you can add more salt later to taste

3) Shake Oregano flakes to lightly cover every piece (one teaspoon or one tablespoon)

4) Shake Basil flakes to lightly cover each piece (one teaspoon or one tablespoon)

5) Cut a sweet white onion into bite sized cubes and add to bowl.(One cube per triangle of tomato)

5) Sparingly shake in a little garlic powder and onion powder

6) Mix the ingredients and marinate for over 10 minutes to get flavor into the juice (longer the better)

7) Cut up a crispy baguette into small slices -
These will be dipped into the bowl with a piece of onion and tomato on your fork
Note: Lightly roasting the outside of the bread before cutting helps to crisp up the exterior of the baguettes.

8) Finally and very important, add Olive Oil to the bowl ( amount equal to 1/4 of the liquid extracted marinating(

9) Serve family style direct from the bowl like fondue .

10 ) Serve with red wine
