Gruyère is a hard yellow cheese, that originated in the town of Gruyères, Switzerland.

Gruyère is sweet but slightly salty. It is creamy and nutty when young, but it becomes assertive, earthy and complex when it ages. When fully aged (five months to a year) it tends to have small cracks which impart a slightly grainy mouthfeel.
