Romano is one of the oldest (if not the oldest) cheese mentioned in recorded history.

Romano is a hard cheese that can be made from cow, goat, or sheep's milk. It must be aged at least a minimum of five months.

My Romano was made from cow's milk.

The picture shows the cheese immediately after being made.
When the cheese is cut, more pictures will be added showing the cheese change as it is rubbed and a rind forms.
