Made: June, 13, 2012 from Goat's milk
Ready to Eat: August , 2012

This cheddar cheese is made from raw goat's mild. Goat cheeses are easier to digest than cow's milk cheeses because the fat cells are smaller. Compared to cheese made from cow's milk, goat cheese has less calories, it is lower in fat, and it has less calories and cholesterol. However this cheese has a full, rich and creamy flavor. It also provides more calcium and fewer carbohydrates when compared to cow's milk.

Cheddar is the most widely producted cheese in the United States. Cheddar is traditionally made from cow's milk; however, it can be made from goat's milk. Goat Milk Cheddar has both a smooth texture with a sweet, mild flavor. Goat cheddar is not rind-ripened, hence it is free of any pungent aromas and flavors. Goat Cheddar is a table cheese that goes with with pears, apples or just as is. Goat Milk Cheddar is also a wonderful melting cheese, ideal for grilled cheese sandwiches, mixed into polenta or melted onto vegetables like cauliflower. Goat Cheddar also goes with hamburgers and grilled cheese.
