Mozzarella is a classic Italian Cheese

In Italy Mozzarella is often referred to as "Fior di Late" , that is, "The Flower of Milk"

Mozzarella is made by spinning and then cutting the curd (in Italian mozzare means to cut).

Due to it high moisture content Mozzarella is usually served the day it is made; but it can be kept in brine for up to a week or longer when put in vacuum sealed packages.

The second picture shows Mozzarella melted on toast.
