Joan's Washed Rine Cheese

This cheese was washed twice a week for over two months

What is a washed-rind cheese? It is a cheese that is washed with brine, or a salty water during aging.

Some cheeses* are washed in a brine in order to discourage the development of certain molds or bacteria and to enhance the flavor




Below is a picture of
the Humidifier that keeps the cheese cave at the correct humidity
