My wheel of
                  Colby Cheese

This cheese was made with four gallons of goat's milk
As this cheese was being made the curds
repeatedly agglomerated into clumps

While being pressed, the cheese expanded and after pressing the
cheese wheel had an odd shape. Furthermore the shape of the wheel changed as the cheese was left standing overnight.
(see pictures below)

After pressing the cheese wheel was somewhat soft and spongy. Many of the holes in the cheese were elliptically shaped.
