Cheese makers know that each wheel of cheese
does not turn out as planned.

For expample consider this wheel of
                  Colby Cheese


This cheese was made with four gallons of goat's milk
However, it did not meet Joan's high standards and hence
this entire wheel of cheese ended up in the garbage

As Joan was making this cheese she noticed that the curds
repeatedly agglomerated into cup sized masses

While being pressed, the cheese expanded and after pressing the
cheese wheel had an odd shape. Furthermore the shape of the wheel changed as the cheese was left standing overnight. (see pictures below)

After pressing the cheese wheel was somewhat soft and spongy. Many of the holes in the cheese were elliptically shaped. (see pictures below)

Joan's judgment: This cheese did not meet her standards and it
discarded in the garbage.

As a result of this disaster,
we will find a new cheese milk supplier
