Sparassis crispa
Also called:
Cauliflower mushroom, Wood cauliflower and the Noodle mushroom
Found on Larch Mt. 10/12/15
This is considered a choice edible species.
The fruitbody has many leaf-like lobes, curled and contorted.
The lobes become browner and tougher with age
These are very good when either baked or fried,
and in soups and stews.
To make a casserole: use Parmesan cheese.
Simply pour the cheese over a greased oven-proof dish of these mushrooms
Bake in the oven until the top is golden brown,
Do this just as you would if using vegetable cauliflower.
The Cauliflower mushroom is also one of the very best fungi
for drying, because it re-constitutes so well.
Cauliflower fungus can be used as the basis of a delicious Cheese,
